BANANA CHOCOLATE RUM MUG CAKE
This is gluten AND dairy free! Super easy, microwavable 1 mug cake that is decadent and guilt free!
Garnish with some cocoa powder/ grated cinnamon.
1 medium ripe banana
2 tablespoon nut butter (I used chunky peanut butter)
1 tablespoon dark rum
1 1/2 tablespoon maple syrup
2 tablespoons cocoa powder
Pinch of Salt
Cinnamon Dust (for garnish)
Chocolate chips (optional)
Yield: 1 serving
Mash the banana in a large measuring cup with a fork until very little lumps are left.
Add the nut butter, maple syrup, cocoa, rum, pinch of salt and beat until smooth. Pour into a ramekin/ small mug (leave room for rising - do not fill over 3/4 full)
Microwave in increments of 45 seconds ( twice usually does the trick, microwave dependant). It should still be slightly goey in the middle ! Dust top with some cinnamon and garnish with slices of banana and chocolate chips (optional). Serve immediately.
If you don't have a microwave - preheat an oven to 350F, and bake for 10-12 minutes, until the middle is goey but not watery and sides are slightly browned.
