Cucumber lime Cordial: Recipes

CARAMELIZED BANANA PEEL SYRUP

At EC Projects, we try to use as much of our chosen ingredients as possible, even the part that we normally deem as 'waste' ! YES this is a banana peel syrup, packed with potassium and tastes just like the rest of it.

Ingredients: 

Peel of 1 Banana (cut into small pieces)

2/3 Cup Brown Sugar 

1/2 Cup Water

Yield: About 250ml

Instructions:

  1. Wash your banana peels and pat dry. In a small pot, heat up banana peels on medium - high heat to release some oils. 

  2. Add 1/3 cup brown sugar and stir, until sugars start caramelizing, stirring frequently. 

  3. Add the other 1/3 cup brown sugar and stir until sugars are softened. 

  4. Add 1/2 cup water and bring to rolling boil. Turn down heat and simmer for about 5 minutes, until syrup is slightly reduced. 

  5. Let cool and strain out solids. Bottle and refrigerate, good for 2 weeks.
