CANARY MELON SPRITZ

Another beauty coming your way! This collins-style drink draws from flavours I loved as a child growing up in Asia - made with Fino Sherry, canary melon and a lemongrass & butterfly pea soda is savoury- sweet and everything in between

Ingredients: 

2oz Fino Sherry
0.25oz Absinthe
0.75oz Canary Melon Cordial**
0.75oz Lime Juice

Top with Butterfly Pea & Lemongrass Soda*

Instructions:

  1. Add all ingredients to a shaker tin, add ice and shake for 10-15 seconds. 

  2. Strain into tall collins glass, top with butterfly pea and lemongrass soda. Garnish with kaffir lime leaves.

Canary Melon Cordial **

Juice canary melons to make 250ml juice, add 300g sugar and 7.5g citric acid and blitz in blender until smooth. Good for 2 weeks in refrigerator.

Butterfly Pea & Lemongrass Soda*

Brew 500ml water with 5g butterfly pea flower and 2g dried lemongrass. Strain out solids. Carbonate in soda syphon. Use immediately.
