An easy syrup made with grapefruit peels and beautiful aromatics that will highlight any white spirit you decide to pair it with. Or, toss it in some soda!

Ingredients:

100g White Sugar

100g Hot Water

5g Fennel Seed

5g Coriander Seed

Peel of 1 Grapefruit

Yield: About 200ml

Instructions:

  1. Measure out sugar in a mason jar. With a vegetable peeler, peel grapefruit and add skins to mason jar. Put lid back on, shake and let sit for at least 5 hours. Overnight works best.

  2. In a small pan, toast fennel and coriander seeds over medium heat until you can smell aromatics, about 4-5 minutes. Add to sugar and peel mixture when it is still warm.

  3. Add hot water to mixture. Cover and shake until well integrated. Let sit for 3 hours. Strain out solids and bottle.  Good in refrigerator for 2 weeks.
