Inspired by the sights and scents of Marrakech, this is a take on a tiki classic-the mai tai, but made zero proof. Expect flavours of marzipan, vanilla, chai, smoky-sweet cinnamon, black pepper, fennel and brightness of bitter oranges. Yields one cocktail
1oz Cashew Orgeat
1oz Lime Juice
0.5oz Seedlip Grove 42
2.5oz Chai Tea (strong steeped)
lemon mint garnish (optional)
Ingredients (Cashew Orgeat)
200ml cashew milk
1/4 teaspoon rosewater
1. Combine Cashew Orgeat, Seedlip Grove 42 and lime juice in a shaker tin, fill with ice and shake vigourously for 10 to 15 seconds.
2. Pour the contents into a large juice glass.
3. Add more pebbled ice, and layer chai tea on top.
4. Garnish with Wheel of lime, or an aromatic herb like lemon mint varietal (photographed)
