SPICED CARROT AND HONEY SYRUP

A seemingly particular set of flavours actually works fantastically in cocktails with Gin, Rum, Aquavit orTequila! The savoury element of carrot pairs great with some sweet spice.

Ingredients: 

2/3 cup Water 

2 Cinnamon Sticks 

1/4 teaspoon Red Chili Flakes

4 Carrots, peeled and cut into large chunks​

1 cups Honey 

Yield: About 750ml

Instructions

Step 1

In a small pot, bring water, cinnamon and chili flakes to boil. Turn heat to low and simmer for 5 - 10 minutes, or until liquid has reduced. Let cool in pot. 

Step 2

Strain out solids from cinnamon chili water. Measure 1/2 cup and add In  blender. Add chopped up carrots and blend on high until smooth. Strain mixture out with cheese cloth, squeeze out excess liquid and return to blender. 

 

Step 3

Add honey to liquid in blender and blend on low until well integrated. 

Step 4

Bottle and refrigerate. Good for 2 weeks. 

CARROT GINGER MULE

A non alcoholic take on a savoury sweet Moscow Mule, so easy all you need is a mason jar !

Ingredients: 

30ml Spiced Carrot Honey Syrup 

1/4 teaspoon Grated Ginger 

22ml Fresh Lime Juice

Soda

Step 1

Zest limes and reserve zests for garnish. Add all ingredients but soda to cobbler shaker. 

Step 2

Add ice and put the lid on. Shake vigorously for 10-15 seconds. 

 

Step 3

Strain into mule cup, add ice and top with a touch of soda. Stir with straw.

Step 4

Add more ice and garnish with prepared lime zests.
